Ingredients

  • 4 pieces Portabella mushroom caps
  • 3 tablespoons Olive oil
  • 2 tablespoons Balsamic vinegar
  • 3 cloves Garlic, minced
  • 0.5 teaspoons Salt
  • 0.25 teaspoons Black pepper
  • 4 pieces Ciabatta or focaccia bread
  • 4 slices Mozzarella cheese, sliced
  • 1 cup Roasted red peppers
  • 1 cup Fresh arugula or spinach
  • 0.25 cup Pesto (optional)

Directions

Step 1

Clean the portabella mushroom caps by gently wiping them with a damp paper towel. Remove the stems and scrape out the gills using a spoon if desired.

Step 2

In a small bowl, whisk together olive oil, balsamic vinegar, minced garlic, salt, and black pepper.

Step 3

Brush the marinade generously over both sides of each mushroom cap. Let the mushrooms marinate for about 10 minutes.

Preheat a grill or grill pan to medium-high heat. If using a panini press, preheat it as well.

Grill the mushrooms cap-side up for 4-5 minutes, then flip and grill the other side for an additional 4-5 minutes, or until tender and slightly charred.

If making panini, grill the sandwich in a panini press for 2-3 minutes, or until the bread is toasted and the cheese is melted. If using a skillet, press gently with a spatula or a heavy pan to achieve a similar effect.
