  • 4 large caps Portabella mushrooms
  • 3 tablespoons Olive oil
  • 2 tablespoons Balsamic vinegar
  • 2 cloves minced Garlic
  • 0.5 teaspoons Salt
  • 0.25 teaspoons Black pepper
  • 8 cups Baby spinach
  • 1 cup halved Cherry tomatoes
  • 0.25 medium thinly sliced Red onion
  • 0.5 cup crumbled Feta cheese
  • 0.25 cup toasted Pine nuts
  • 1 teaspoon Honey
  • 1 teaspoon Dijon mustard

Directions

Step 1

Preheat a grill or grill pan over medium heat.

Step 2

Gently clean the portabella mushroom caps with a damp paper towel and remove the stems. In a small bowl, whisk together 2 tablespoons of olive oil, 1 tablespoon of balsamic vinegar, minced garlic, salt, and pepper.

Brush both sides of the mushroom caps generously with the mixture.
