  • 1 cup Coconut milk
  • 2 tbsp Soy sauce (for sauce)
  • 1 tbsp Brown sugar
  • 1 tbsp Rice vinegar
  • 2 tbsp Water
  • 1 cup Fresh basil leaves, chopped
  • 8 Wood or metal skewers
  • 0.5 tsp Salt
  • 0.5 tsp Pepper
  • 0.25 cup Chopped roasted peanuts (for garnish, optional)

Directions

Step 1

Cut the pork tenderloin into bite-sized cubes, about 1 inch in size.

In a medium bowl, whisk together 3 tbsp soy sauce, 2 tbsp honey, 2 tbsp lime juice, 2 minced garlic cloves, 1 tsp ground ginger, 2 tbsp vegetable oil, 0.5 tsp salt, and 0.5 tsp pepper to create the marinade.
