Ingredients

  • 4 pieces Bone-in pork chops
  • 3 tablespoons Olive oil
  • 1 teaspoon Garlic powder
  • 1 teaspoon Paprika
  • 1 teaspoon Fresh thyme leaves
  • 1 teaspoon Salt
  • 0.5 teaspoon Ground black pepper
  • 1 large Red bell pepper
  • 2 medium Zucchini
  • 1 medium Red onion
  • 1 cup Cherry tomatoes
  • 2 tablespoons Balsamic vinegar
  • 1 teaspoon Honey
  • 2 tablespoons Fresh parsley

Directions

Step 1

Preheat the grill to medium-high heat (375-400°F).

Step 2

In a small bowl, mix together olive oil, garlic powder, paprika, thyme, salt, and black pepper.

Pat the pork chops dry with a paper towel, then brush both sides evenly with the olive oil mixture. Set aside to marinate while preparing the vegetables.

Cut the red bell pepper into thick strips, slice the zucchini into rounds, and cut the red onion into wedges.
