  • 4 large caps Fresh porcini mushrooms
  • 3 tablespoons Olive oil

  • 1 teaspoon Smoked paprika
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 3 medium Tomatoes
  • 0.5 Red onion
  • 1 tablespoon White vinegar
  • 1 teaspoon Brown sugar
  • 1 teaspoon Dijon mustard
  • 4 Burger buns
  • 4 Lettuce leaves
  • 4 slices Sliced cheese (optional)

Directions

Step 1

Clean the porcini mushroom caps with a damp paper towel to remove dirt. Do not wash under running water as mushrooms absorb water easily.

Step 2

In a small bowl, mix 2 tablespoons of olive oil, minced garlic, smoked paprika, salt, and black pepper. Brush this mixture evenly over both sides of the mushroom caps.

Step 3

Prepare the tomato relish: Dice the tomatoes and finely chop the red onion. Heat 1 tablespoon of olive oil in a small saucepan over medium heat. Add the onions and cook for 3-4 minutes until softened.
