Ingredients

  • 1 whole Fresh pineapple
  • 1 Red bell pepper
  • 0.5 Red onion
  • 0.25 cup Fresh cilantro
  • 1 Lime
  • 1 Jalapeño pepper
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 1 Mango (for Tropical variation)
  • 1 Avocado (for Tropical variation)
  • 1 teaspoon Honey (for Spicy variation)
  • 0.25 teaspoon Ground cayenne pepper (for Spicy variation)

Directions

Step 1

Preheat your grill to medium-high heat.

Step 2

Peel and core the pineapple, then slice it into 1/2-inch thick rings.

Step 3

Brush the pineapple slices lightly with olive oil to prevent sticking, and place them on the grill grates.

Step 4

Grill the pineapple for 2-3 minutes per side until caramelized and lightly charred. Remove from heat and let them cool slightly.

Step 5

While the pineapple cools, finely dice the red bell pepper, red onion, jalapeño pepper (remove seeds for a milder flavor), and fresh cilantro.

Step 6

Once cooled, chop the grilled pineapple into small, bite-sized pieces.

Step 7

In a mixing bowl, combine the chopped grilled pineapple, red bell pepper, red onion, jalapeño, and cilantro.

Step 8

Squeeze the juice of one lime over the mixture and add salt and black pepper. Stir well to combine for the Classic Grilled Pineapple Salsa.

Step 9

For the Spicy variation, stir in 1 teaspoon honey and 1/4 teaspoon ground cayenne pepper to the classic mix.

Step 10

For the Tropical variation, dice one mango and one avocado, and gently fold them into the classic salsa for a sweeter, creamier option.

Step 11

Serve immediately with tortilla chips, grilled chicken, fish tacos, or as a side dish. Store leftovers in an airtight container in the refrigerator for up to 2 days.
