Ingredients

  • 4 whole Red bell peppers
  • 1 cup Fresh basil leaves
  • 0.25 cup Parmesan cheese
  • 2 tablespoons Pine nuts
  • 2 cloves Garlic
  • 0.25 cup Olive oil
  • 1 tablespoon Lemon juice
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper

Directions

Step 1

Preheat your grill to medium-high heat.

Step 2

Cut the red bell peppers in half lengthwise and remove the seeds and membranes.

Step 3

Lightly brush the cut sides of the peppers with 1 tablespoon of olive oil (not included in ingredient list).

Place the peppers cut-side down on the preheated grill. Grill for about 5 minutes, until the peppers develop grill marks and begin to soften slightly.
