Ingredients

  • 12 pieces Mini sweet peppers
  • 4 ounces Goat cheese
  • 2 ounces Cream cheese, softened
  • 2 tablespoons Fresh chives, finely chopped
  • 2 tablespoons Fresh parsley, finely chopped
  • 1 clove Garlic, minced
  • 1 teaspoon Lemon zest
  • 1 tablespoon Olive oil
  • 0.25 teaspoon Salt
  • 0.25 teaspoon Black pepper

Directions

Step 1

Preheat your grill to medium heat, approximately 375°F (190°C).

Step 2

Wash the mini sweet peppers and pat them dry. Slice each pepper lengthwise and remove the seeds and membranes, being careful to keep the pepper halves intact.

Step 3

In a medium mixing bowl, combine the goat cheese, cream cheese, chives, parsley, minced garlic, lemon zest, salt, and black pepper. Mix well until smooth and evenly combined.
