Ingredients

  • 4 pieces large sweet onions (such as Vidalia or Walla Walla)
  • 4 tablespoons olive oil
  • 4 tablespoons unsalted butter
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 4 tablespoons grated Parmesan cheese (optional)
  • 1 tablespoon fresh parsley, chopped (optional for garnish)

Directions

Step 1

Preheat your grill to medium heat, approximately 375–400°F (190–200°C).

Step 2

Peel the onions, keeping the root end intact to hold the layers together.

Step 3

Place each onion on a cutting board. Starting from the top center, cut through the onion down toward the root, stopping about 1/4 inch above the root to avoid cutting all the way through. Make 4-6 equally spaced cuts around the onion to create 'petals.' Carefully spread the layers to create a blossom effect.

Step 4

Combine olive oil, melted butter, garlic powder, smoked paprika, dried thyme, salt, and black pepper in a small bowl. Mix well to create a seasoning drizzle.

Step 5

Place each onion on its own square of aluminum foil, large enough to fully wrap the onion.

Step 6

Drizzle the seasoning mixture evenly over the onions, making sure the mixture gets between the onion layers. Sprinkle Parmesan cheese on top if desired.

Step 7

Wrap each onion tightly in the aluminum foil, ensuring no openings so the onions steam and remain moist while grilling.

Step 8

Place the foil-wrapped onions on the preheated grill over indirect heat. Close the lid and cook for 35–40 minutes, or until the onions are tender when pierced with a fork.

Step 9

Carefully remove the foil-wrapped onions from the grill using tongs. Allow them to rest for 5 minutes before unwrapping, as they will be hot and release steam.

Step 10

Transfer the grilled onion blossoms to a serving plate, garnish with chopped parsley if desired, and serve warm.
