Ingredients

  • 4 pieces (10-12 oz each) New York strip steaks
  • 2 tablespoons Olive oil
  • 2 teaspoons Kosher salt
  • 1 teaspoon Freshly ground black pepper
  • 3 pieces Garlic cloves (minced)
  • 1 cup Fresh parsley (finely chopped)
  • 1 cup Fresh cilantro (finely chopped)
  • 2 tablespoons Fresh oregano leaves (finely chopped)
  • 3 tablespoons Red wine vinegar
  • 1 teaspoon Crushed red pepper flakes
  • 2 tablespoons Lemon juice
  • 0.5 teaspoons Salt
  • 0.5 teaspoons Black pepper
  • 0.5 cup Extra virgin olive oil

Directions

Step 1

Preheat your grill to medium-high heat and lightly oil the grates.

Step 2

Season each New York strip steak with olive oil, kosher salt, and freshly ground black pepper on both sides. Let them sit at room temperature while preparing the chimichurri.

Step 3

In a medium bowl, combine the minced garlic, chopped parsley, cilantro, oregano, red wine vinegar, crushed red pepper flakes, lemon juice, salt, and black pepper.

Step 4

Slowly whisk in the extra virgin olive oil until the mixture is well combined. Set the chimichurri aside to let the flavors meld together.

Step 5

Place the steaks on the preheated grill. Grill each side for 4-5 minutes or until your desired doneness is reached (130°F for medium-rare, 140°F for medium, 150°F for medium-well). Use a meat thermometer for accuracy.

Step 6

Once the steaks are cooked, remove them from the grill and let them rest on a cutting board for 5-10 minutes to retain their juices.

Step 7

Serve the steaks with a generous drizzle of chimichurri sauce on top or on the side. Pair with your favorite sides and enjoy!
