Ingredients

  • 8 slices Hearty sandwich bread (such as sourdough or ciabatta)
  • 8 slices Mozzarella cheese
  • 2 cups Fresh spinach leaves
  • 8 slices Bacon
  • 2 medium Tomato
  • 0.5 cup Mayonnaise
  • 4 tablespoons Butter
  • 0.25 teaspoon Salt
  • 0.25 teaspoon Black pepper

Directions

Step 1

Preheat a large skillet or griddle over medium heat.

Step 2

Cook the bacon in the skillet until crispy, about 5-7 minutes. Drain on paper towels and set aside.

Step 3

Thinly slice the tomatoes and season with a pinch of salt and pepper. Set aside.

Step 4

Spread a thin layer of mayonnaise on one side of each bread slice. The mayonnaise will help the sandwich achieve a golden crust when grilled.

Step 5

Butter the opposite side of each bread slice to ensure it toasts evenly during grilling.

Step 6

Assemble the sandwiches: On the mayo-side of 4 bread slices, layer 2 slices of mozzarella cheese, a bed of fresh spinach leaves, 2 slices of cooked bacon, and a few tomato slices. Top with another slice of bread, mayo-side facing outward.

Step 7

Place the assembled sandwiches on the preheated skillet or griddle. Cook for 3-4 minutes per side, or until the bread is golden brown and crispy and the cheese is melted.

Step 8

Remove from the heat, let the sandwiches rest for 1 minute, then slice in half and serve immediately.
