  • 1.5 teaspoons Salt
  • 1 teaspoon Black pepper
  • 1.5 cups Chicken stock
  • 1 cup Couscous
  • 1 tablespoon Unsalted butter
  • 1 medium Yellow onion, finely chopped
  • 1 teaspoon Curry powder
  • 0.5 cup Dried apricots, chopped
  • 2 tablespoons Fresh parsley, chopped

Directions

Step 1

In a small bowl, combine olive oil, lemon juice, garlic, ground cumin, coriander, paprika, cinnamon, salt, and black pepper to create a marinade.

Step 2

Place the chicken breasts in a resealable plastic bag or shallow dish, and pour the marinade over the chicken. Seal or cover, and refrigerate for at least 1 hour or up to overnight.

Preheat your grill to medium-high heat. Remove the chicken from the marinade and discard any excess marinade.
