  • 600 grams boneless chicken thighs
  • 1 large red onion
  • 1 large red bell pepper

  • 60 ml olive oil
  • 30 ml lemon juice
  • 3 garlic cloves
  • 2 teaspoons dried oregano
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 15 grams fresh parsley
  • 12 pieces wooden skewers

Directions

Step 1

Soak the wooden skewers in water for at least 30 minutes to prevent them from burning on the grill.

Step 2

Cut the boneless chicken thighs into bite-sized pieces, roughly 1.5-inch each.

Step 3

In a large bowl, combine olive oil, lemon juice, minced garlic cloves, dried oregano, ground cumin, smoked paprika, salt, and black pepper. Mix well to create the marinade.

Add the chicken pieces to the marinade, ensuring they are well coated. Cover and let the chicken marinate in the refrigerator for at least 1 hour, preferably 2-3 hours for enhanced flavor.
