Ingredients

  • 4 pieces Pork chops
  • 1 medium Butternut squash
  • 1 cup Apple cider
  • 3 tablespoons Maple syrup
  • 2 teaspoons Dijon mustard
  • 3 tablespoons Olive oil
  • 2 cloves Garlic
  • 0.5 teaspoons Ground cinnamon
  • 1 tablespoon Fresh thyme
  • 1 teaspoon Salt
  • 0.5 teaspoons Black pepper

Directions

Step 1

Preheat your grill to medium-high heat (about 400°F).

Step 2

Peel and seed the butternut squash, then cut it into 1/2-inch thick slices.

Step 3

In a small saucepan over medium heat, combine the apple cider, maple syrup, Dijon mustard, crushed garlic, and ground cinnamon. Stir and let it reduce for 8-10 minutes until it thickens slightly and coats the back of a spoon.

Step 4

Brush the pork chops and squash slices with olive oil. Sprinkle both sides with salt and black pepper.

Step 5

Place the pork chops and squash on the grill. Cook the pork for about 4-5 minutes per side, depending on thickness, until the internal temperature reaches 145°F. Grill the squash slices for 3-4 minutes per side, until tender and lightly charred.

Step 6

Brush both the pork chops and squash with the maple cider glaze during the last 2 minutes of grilling.

Step 7

Remove the pork chops and squash from the grill and let them rest for 5 minutes.

Step 8

Garnish with fresh thyme leaves before serving. Enjoy your Grilled Maple Cider Glazed Pork and Squash!
