Ingredients

  • 4 pieces (6 oz each) Mahi Mahi fillets
  • 3 tablespoons Olive oil
  • 1 teaspoon Garlic powder
  • 1 teaspoon Paprika
  • 1 teaspoon Salt
  • 0.5 teaspoons Black pepper
  • 2 large Red bell peppers
  • 2 Garlic cloves, minced
  • 1 tablespoon Lemon juice
  • 0.25 cups Chicken or vegetable broth
  • 0.5 cups Crumbled feta cheese
  • 2 tablespoons Fresh parsley, chopped

Directions

Step 1

Preheat your grill to medium-high heat (around 400°F).

Step 2

Brush the mahi mahi fillets with 2 tablespoons of olive oil on both sides and season evenly with garlic powder, paprika, salt, and black pepper. Set aside.

Step 3

Roast the red bell peppers directly over a gas flame or under the broiler until the skin is charred and blistered, turning occasionally for even roasting. This will take about 8-10 minutes.
