Ingredients

  • 4 pieces (6 ounces each) Mahi Mahi fillets
  • 2 tablespoons Olive oil
  • 1 teaspoon Salt
  • 0.5 teaspoons Black pepper
  • 1 cup Fresh pineapple juice
  • 2 tablespoons Dark rum
  • 2 tablespoons Brown sugar
  • 1 tablespoon Soy sauce
  • 1 tablespoon Fresh lime juice
  • 2 cloves Minced garlic
  • 0.5 teaspoons Ground ginger
  • 1 teaspoon Cornstarch
  • 1 teaspoon Water
  • 4 pieces (optional, for garnish) Fresh pineapple slices
  • 2 tablespoons (optional, for garnish) Chopped cilantro

Directions

Step 1

Preheat your grill to medium-high heat and lightly oil the grates to prevent sticking.

Step 2

Pat the mahi mahi fillets dry with paper towels and rub them with olive oil. Season both sides with salt and black pepper.

Step 3

In a small saucepan, combine the pineapple juice, dark rum, brown sugar, soy sauce, lime juice, minced garlic, and ground ginger. Heat over medium heat, stirring occasionally, until the mixture begins to simmer (about 3-4 minutes).

Step 4

In a small bowl, mix the cornstarch and water to create a slurry. Gradually whisk the slurry into the saucepan and cook the mixture for another 2-3 minutes, or until the glaze has thickened. Remove from heat and set aside.

Step 5

Place the seasoned mahi mahi fillets on the grill. Cook for approximately 4-5 minutes per side, brushing generously with the pineapple rum glaze during the last minute of cooking on each side. The fish is done when it easily flakes with a fork and has an internal temperature of 145°F (63°C).

Step 6

Optional: If using pineapple slices for garnish, grill them alongside the mahi mahi for 1-2 minutes per side, until caramelized and lightly charred.

Step 7

Remove the mahi mahi from the grill and let it rest for 2 minutes. Brush it with any remaining glaze before serving.

Step 8

Plate each fillet with a slice of grilled pineapple and optionally garnish with chopped cilantro for added freshness.

Step 9

Serve immediately and enjoy your tropical-inspired grilled mahi mahi!
