Ingredients

  • 2 pieces Whole live lobsters
  • 3 tablespoons Olive oil
  • 4 tablespoons Unsalted butter
  • 4 pieces Garlic cloves, minced
  • 1 cup Breadcrumbs
  • 1 cup Parmesan cheese, grated
  • 2 tablespoons Parsley, finely chopped
  • 2 tablespoons Fresh basil, finely chopped
  • 1 teaspoon Lemon zest
  • 0.5 teaspoon Red pepper flakes
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper, freshly ground
  • 4 pieces Lemon wedges

Directions

Step 1

Fill a large stockpot with water and bring to a boil. Place live lobsters in the pot and parboil for 5-6 minutes. Remove and plunge them into an ice bath to stop cooking.

Step 2

Using a sharp knife, split the parboiled lobsters in half lengthwise. Remove the tomalley (green liver) and any other inedible parts. Leave the claw meat intact.

Step 3

Preheat your grill to medium-high heat.

Step 4

In a small skillet over medium heat, melt 2 tablespoons of butter and 2 tablespoons of olive oil. Add the minced garlic and sauté until fragrant, about 1 minute.
