Ingredients

  • 12 oz linguine pasta
  • 2 lbs fresh clams (Manila or littleneck)
  • 4 tbsp extra virgin olive oil
  • 2 tbsp unsalted butter
  • 6 pieces garlic cloves, minced
  • 1 cup dry white wine
  • 0.5 tsp red pepper flakes
  • 0.25 cup fresh parsley, chopped
  • 1 piece lemon, juiced
  • 0 to taste salt
  • 0 to taste black pepper

Directions

Step 1

Bring a large pot of salted water to a boil. Cook the linguine pasta according to package instructions, until al dente. Drain and set aside, reserving 1 cup of pasta water.

Step 2

Preheat your grill to medium-high heat.

Step 3

While the grill is heating, place the clams in a large bowl filled with cold water and let them soak for 20 minutes to remove any sand. Scrub the shells clean if needed.

Step 4

In a large grill-safe skillet or cast-iron pan, heat 2 tablespoons of olive oil over medium heat on your stovetop. Add the minced garlic and sauté until fragrant, about 1-2 minutes.

Add the white wine, red pepper flakes, and butter to the skillet. Stir and let the mixture simmer for 2-3 minutes.

Step 6

Drain the clams and add them to the skillet. Cover tightly with aluminum foil and transfer the skillet to the preheated grill.

Grill the clams for 8-10 minutes, or until they open. Discard any clams that do not open.

Remove the skillet from the grill and return it to medium heat on your stove. Add the cooked linguine to the skillet, tossing the pasta with the clam sauce to coat. Add the reserved pasta water, a little at a time, if the sauce needs loosening.

Drizzle the remaining 2 tablespoons of olive oil over the pasta and serve immediately with additional parsley and lemon wedges, if desired.
