Ingredients

  • 2 medium zucchini
  • 2 medium yellow squash
  • 3 medium bell peppers (any color)
  • 1 large red onion
  • 12 pieces asparagus spears
  • 1 cup grape tomatoes
  • 0.25 cup olive oil
  • 3 tablespoons lemon juice
  • 2 tablespoons fresh thyme leaves
  • 2 pieces garlic cloves, minced
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons balsamic glaze (optional, for garnish)

Directions

Step 1

Wash and dry all vegetables thoroughly.

Slice the zucchini and yellow squash into 1/4-inch thick rounds. Cut the bell peppers into large strips. Slice the red onion into thick rings. Trim the woody ends off the asparagus spears.

In a large mixing bowl, whisk together the olive oil, lemon juice, thyme leaves, minced garlic, salt, and black pepper.
