Ingredients

  • 4 pieces salmon fillets
  • 2 whole lemon
  • 3 tablespoons fresh dill
  • 4 tablespoons extra virgin olive oil
  • 2 whole garlic cloves
  • 1.5 teaspoons salt
  • 1 teaspoon black pepper
  • 1 whole English cucumber
  • 1 small red onion
  • 2 tablespoons white wine vinegar
  • 1 teaspoon honey
  • 2 tablespoons fresh parsley

Directions

Step 1

Preheat your grill or grill pan to medium-high heat.

Step 2

In a small bowl, combine 2 tablespoons of olive oil, the juice of 1 lemon, 2 tablespoons of chopped dill, 2 minced garlic cloves, 1 teaspoon salt, and 1 teaspoon black pepper to make the marinade.

Brush the salmon fillets with the marinade generously on all sides. Let them rest while you prepare the cucumber salad.
