Total Time:35 mins
Servings: 4

Ingredients

  • 8 pieces lamb chops
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 4 cloves garlic cloves, minced
  • 1 cup red wine
  • 2 tablespoons honey
  • 1 tablespoon balsamic vinegar
  • 1 tablespoon fresh rosemary, chopped

Directions

Step 1

Pat the lamb chops dry with paper towels and season both sides generously with salt and black pepper.

Step 2

Heat 1 tablespoon of olive oil in a heavy-bottomed skillet or grill pan over medium-high heat. Add half the lamb chops and sear for 3-4 minutes on each side until they are golden-brown. Repeat with the rest of the chops, adding the remaining olive oil as needed. Transfer the seared chops to a plate and cover loosely with aluminum foil to keep warm.

Step 3

In the same pan, add the minced garlic and sauté for 30 seconds until fragrant, being careful not to burn it.

Step 4

Deglaze the pan by pouring in the red wine. Use a wooden spoon to scrape up any browned bits from the bottom of the pan.

Step 5

Stir in the honey, balsamic vinegar, and fresh rosemary. Bring the mixture to a simmer and cook for 5-7 minutes, or until the glaze has reduced and thickened slightly.

Step 6

Return the lamb chops to the pan, spooning the glaze over them, and cook for another 2-3 minutes to ensure they are nicely coated and heated through.

Step 7

Remove the lamb chops from the pan and arrange them on a serving platter. Drizzle the remaining glaze over the top.

Step 8

Serve immediately with your favorite sides, such as roasted vegetables or mashed potatoes.
