Ingredients

  • 2 links Kielbasa sausage
  • 2 rolls Hoagie rolls
  • 1 large Yellow onion
  • 1 medium Red bell pepper
  • 1 medium Green bell pepper
  • 2 tablespoons Olive oil
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 4 slices Provolone cheese
  • 2 tablespoons Dijon mustard
  • 2 tablespoons Butter

Directions

Step 1

Preheat your grill or grill pan to medium heat.

Step 2

Slice the yellow onion, red bell pepper, and green bell pepper into thin strips.

Step 3

Heat 1 tablespoon of olive oil in a skillet over medium heat. Add the sliced onion and bell peppers, and season with salt and black pepper. Sauté for 8–10 minutes, stirring occasionally, until the vegetables are soft and caramelized. Remove from heat and set aside.

Step 4

Butter the inside of each hoagie roll with 1 tablespoon of butter.

Step 5

Slice each kielbasa link lengthwise but not all the way through, so they open and lay flat like a book.

Step 6

Brush the kielbasa links with the remaining tablespoon of olive oil and place them on the grill. Cook for 4–5 minutes per side, or until they are nicely charred and heated through.

Step 7

Place two slices of provolone cheese on each kielbasa link while still on the grill and allow the cheese to melt. This should take 1–2 minutes.

Step 8

Toast the buttered hoagie rolls on the grill for about 1–2 minutes until golden brown.

Spread Dijon mustard on the inside of each toasted hoagie roll.

Step 10

Layer the grilled kielbasa with melted cheese onto the hoagie roll, then top with the caramelized onion and pepper mixture.
