  • 4 pieces Italian sausage links
  • 1 medium Red bell pepper

  • 1 medium Red onion
  • 1 pound Baby potatoes
  • 3 tablespoons Olive oil
  • 1 teaspoon Garlic powder
  • 1 teaspoon Dried oregano
  • 1 teaspoon Dried basil
  • 1 teaspoon Paprika
  • 1 teaspoon Salt
  • 0.5 teaspoons Black pepper
  • 0.25 cup Parmesan cheese (optional)

Directions

Step 1

Preheat your grill to medium heat (about 375°F/190°C).

Step 2

Wash and chop the vegetables: slice the red and yellow bell peppers into strips, the zucchini into rounds, and the red onion into wedges. Halve the baby potatoes if they're larger in size.

Step 3

In a large bowl, combine the chopped vegetables. Drizzle with olive oil and sprinkle with garlic powder, dried oregano, dried basil, paprika, salt, and black pepper. Toss to coat evenly.

Cut four large pieces of aluminum foil, approximately 12x18 inches. Place a sausage link in the center of each piece of foil.

Carefully open the foil packets (watch out for steam) and sprinkle with Parmesan cheese, if using. Serve hot directly from the foil packets or transfer to a plate.
