Ingredients

  • 1 pound Shrimp, peeled and deveined
  • 3 tablespoons Olive oil
  • 3 cloves Garlic, minced
  • 2 tablespoons Fresh parsley, chopped
  • 2 tablespoons Fresh basil, chopped
  • 1 teaspoon Lemon zest
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 8 cups Mixed salad greens
  • 1 cup Cherry tomatoes, halved
  • 1 cup Cucumber, sliced
  • 0.25 cup Red onion, thinly sliced
  • 3 tablespoons Lemon juice
  • 1 teaspoon Honey
  • 1 teaspoon Dijon mustard

Directions

Step 1

In a medium bowl, whisk together 2 tablespoons of olive oil, minced garlic, chopped parsley, chopped basil, lemon zest, salt, and black pepper to create the marinade.

Step 2

Add the shrimp to the marinade and toss to coat. Cover and refrigerate for 15-20 minutes to let the flavors infuse.

Step 3

While the shrimp marinates, prepare the lemon vinaigrette by whisking together 1 tablespoon of olive oil, lemon juice, honey, and Dijon mustard in a small bowl. Set aside.

Step 4

Preheat a grill or grill pan over medium-high heat. Lightly oil the grates to prevent sticking.

Step 5

Thread the marinated shrimp onto skewers if using a grill, or place them directly on the grill pan. Cook for 2-3 minutes per side, or until the shrimp are pink, firm, and opaque. Remove from the heat and set aside.

Step 6

In a large bowl, combine the mixed salad greens, cherry tomatoes, cucumber slices, and red onion. Drizzle the lemon vinaigrette over the salad and toss to combine.

Step 7

Divide the salad among four plates and top each serving with the grilled shrimp.

Step 8

Serve immediately and enjoy your fresh and flavorful Grilled Herbed Shrimp on Mixed Greens!
