  • 1 cup mango (diced)
  • 0.5 cup red bell pepper (diced)
  • 0.25 cup red onion (finely chopped)
  • 1 jalapeño (finely minced, seeds removed for less heat)
  • 2 tbsp fresh lime juice
  • 2 tbsp fresh cilantro (chopped, for salsa)
  • 0.25 tsp salt (for salsa)

Directions

Step 1

In a medium bowl, whisk together olive oil, minced garlic, chopped parsley, chopped cilantro, lemon juice, paprika, salt, black pepper, and red pepper flakes (if using).

Add the shrimp to the marinade, tossing to coat thoroughly. Cover and refrigerate for at least 15 minutes (but no more than 30 minutes).
