Ingredients

  • 2 tablespoons Unsalted butter
  • 1 tablespoon Olive oil
  • 2 medium Yellow onion
  • 0.5 teaspoons Salt
  • 0.25 teaspoons Black pepper
  • 1 teaspoon Brown sugar
  • 4 slices Sourdough bread
  • 2 teaspoons Dijon mustard
  • 4 slices Ham
  • 4 slices Gouda cheese
  • 0.5 cups Arugula (optional)

Directions

Step 1

Heat 1 tablespoon of butter and 1 tablespoon of olive oil in a large skillet over medium heat.

Step 2

Slice the onions thinly and add them to the skillet. Sprinkle with salt and black pepper.

Step 3

Cook the onions, stirring occasionally, for about 15-20 minutes, until they are golden brown and caramelized. Add the brown sugar in the last 5 minutes of cooking to enhance sweetness. Remove from skillet and set aside.

Step 4

Spread a thin layer of Dijon mustard on one side of each slice of sourdough bread.

Step 5

Layer 2 slices of ham and 2 slices of Gouda cheese on two of the bread slices, mustard side up. Optionally, add a handful of arugula for a fresh bite.

Step 6

Top each with the caramelized onions and place the remaining slices of bread on top, mustard side down, to form sandwiches.

Step 7

Melt the remaining tablespoon of butter in a skillet over medium heat. Place the sandwiches in the skillet and cook for 3-5 minutes on each side, pressing lightly with a spatula, until the bread is golden brown and the cheese is melted.

Step 8

Remove the sandwiches from the skillet, let them cool for 1-2 minutes, then slice in half and serve immediately.
