Ingredients

  • 4 pieces (6 oz each) Halibut fillets
  • 4 sprigs Fresh thyme
  • 1 whole Lemon
  • 2 tablespoons Olive oil
  • 2 cloves Garlic
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper

Directions

Step 1

Preheat your grill to medium-high heat, approximately 400°F (200°C). If using a stovetop grill pan, heat it over medium-high heat.

Step 2

Rinse the halibut fillets under cold water and pat them dry with paper towels. Set them aside.

Step 3

Peel and finely mince the garlic cloves. Transfer the minced garlic to a small bowl.

Step 4

To the bowl with garlic, add olive oil, the juice of half the lemon (reserve the other half for garnish), salt, and black pepper. Mix well to combine into a marinade.

Step 5

Brush both sides of the halibut fillets generously with the garlic-lemon marinade using a pastry brush.

Place 1 sprig of fresh thyme on top of each halibut fillet. Gently press the thyme onto the surface so it adheres.

Lightly oil the grill grates or grill pan to prevent sticking. Place the halibut fillets on the preheated grill, thyme-side up first.

Remove the halibut from the grill and let it rest for 2 minutes. Squeeze fresh lemon juice from the reserved half of the lemon over the fillets before serving.

Serve the grilled halibut immediately, garnished with additional thyme sprigs and lemon wedges, if desired.
