Ingredients

  • 4 pieces (6 ounces each) Halibut fillets
  • 1 large Red bell pepper
  • 1 large Yellow bell pepper
  • 1 cup (quartered, canned or fresh) Artichoke hearts
  • 4 tablespoons Olive oil
  • 2 tablespoons Fresh lemon juice
  • 2 cloves (minced) Garlic
  • 2 teaspoons (chopped) Fresh thyme
  • 1 teaspoon Salt
  • 0.5 teaspoons (freshly ground) Black pepper
  • 2 tablespoons (chopped, for garnish) Fresh parsley

Directions

Step 1

Preheat the grill to medium-high heat (about 375–400°F).

Step 2

Lightly pat the halibut fillets dry with a paper towel, then season both sides with 0.5 teaspoons of salt and 0.25 teaspoons of black pepper.

Step 3

Slice the red and yellow bell peppers into thin strips and set aside.

Step 4

In a large bowl, toss the pepper strips and artichoke hearts with 2 tablespoons of olive oil, 1 minced garlic clove, 1 teaspoon of chopped thyme, and a pinch of salt and black pepper.
