Spread a thin layer of butter on one side of each slice of pumpernickel bread.
On the unbuttered side of four slices of bread, spread a thin layer of Dijon mustard and a thin layer of mayonnaise.
Place one slice of Gouda cheese on top of the mustard and mayonnaise spread.
Layer two slices of smoked ham over the Gouda cheese.
Add a second slice of Gouda cheese on top of the ham.
Place the remaining four slices of bread on top, buttered side facing outwards, to form sandwiches.
Preheat a skillet or griddle over medium heat.
Place the sandwiches on the skillet, buttered side down, and cook for 3-4 minutes on one side until golden brown and crispy.
Carefully flip the sandwiches and cook for an additional 3-4 minutes on the other side until the bread is golden brown and the cheese is melted.
Remove the sandwiches from the skillet and let them rest for 1-2 minutes before slicing in half and serving. Enjoy!
