Ingredients

  • 1 pound boneless, skinless chicken thighs
  • 4 tablespoons soy sauce
  • 2 tablespoons hoisin sauce
  • 2 tablespoons honey
  • 1 tablespoon rice vinegar
  • 1 teaspoon sriracha sauce
  • 2 cloves garlic
  • 1 teaspoon ginger
  • 1 teaspoon sesame oil
  • 1 teaspoon cornstarch
  • 1 tablespoon water
  • 2 stalks scallions (green onions)
  • 1 tablespoon sesame seeds

Directions

Step 1

In a medium bowl, whisk together soy sauce, hoisin sauce, honey, rice vinegar, sriracha sauce, minced garlic, grated ginger, and sesame oil to create the marinade.

Step 2

Reserve 1/4 cup of the marinade for basting and sauce. Place the remaining marinade in a zip-top bag or shallow dish.

Step 3

Add the chicken thighs to the marinade, ensuring they are evenly coated. Seal the bag or cover the dish and let the chicken marinate in the refrigerator for 1-2 hours.

Step 4

Preheat your grill to medium-high heat (around 400°F). Oil the grill grates to prevent sticking.

Step 5

Remove the chicken thighs from the marinade, allowing any excess marinade to drip off. Discard the used marinade.

Step 6

Grill the chicken for about 6-8 minutes per side, or until the internal temperature reaches 165°F. Baste with the reserved marinade during the last few minutes of grilling for added flavor.

Step 7

While the chicken cooks, prepare the sauce. In a small saucepan, whisk together the reserved marinade, cornstarch, and water. Cook over medium heat, stirring constantly, until the sauce thickens (about 2-3 minutes).

Step 8

Transfer the grilled chicken to a serving platter. Drizzle the thickened sauce over the chicken.

Step 9

Garnish with thinly sliced scallions and sesame seeds before serving.

Step 10

Serve hot with steamed rice and your favorite vegetables, if desired.
