Ingredients

  • 1 lb Large shrimp, peeled and deveined
  • 4 cloves Garlic, minced
  • 3 tbsp Olive oil
  • 2 tbsp Fresh lemon juice
  • 0.25 tsp Saffron threads
  • 2 tbsp Warm water
  • 0.5 tsp Smoked paprika
  • 0.5 tsp Salt
  • 0.25 tsp Black pepper
  • 2 tbsp Chopped fresh parsley (optional for garnish)
  • 6 Wooden or metal skewers

Directions

Step 1

In a small bowl, add the saffron threads to the warm water and let them steep for 5 minutes to release their color and flavor.

Step 2

In a larger bowl, combine the minced garlic, olive oil, lemon juice, saffron water, smoked paprika, salt, and black pepper. Whisk to create the marinade.

Step 3

Add the shrimp to the marinade and toss to coat evenly. Cover and refrigerate for 15 to 30 minutes to let the shrimp absorb the flavors.

Step 4

If using wooden skewers, soak them in water for 20 minutes to prevent burning during grilling.

Step 5

Preheat the grill to medium-high heat (about 400°F). Lightly oil the grates to prevent sticking.

Step 6

Thread the marinated shrimp onto the skewers, about 4-5 shrimp per skewer. Reserve any leftover marinade for basting.

Step 7

Place the skewers on the preheated grill and cook for 3-4 minutes per side, or until the shrimp are opaque and slightly charred. Baste with the reserved marinade during grilling for extra flavor.

Step 8

Remove the skewers from the grill and transfer to a serving platter. Garnish with chopped parsley if desired, and serve immediately.
