Ingredients

  • 4 slices sourdough bread
  • 4 slices Fontina cheese
  • 1 cup cremini mushrooms
  • 2 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • 2 teaspoons Dijon mustard
  • 1 clove garlic
  • 0.25 teaspoons salt
  • 0.25 teaspoons black pepper

Directions

Step 1

Clean and slice the cremini mushrooms into thin slices.

Step 2

Finely mince the garlic clove.

Step 3

In a medium skillet, heat the olive oil over medium heat.

Step 4

Add the mushrooms and minced garlic to the skillet. Sprinkle with salt and pepper.

Step 5

Sauté the mushrooms for 5-7 minutes, stirring occasionally, until they are golden brown and tender. Remove from heat and set aside.

Step 6

Spread 1 teaspoon of Dijon mustard on one side of each of the 4 slices of sourdough bread.

Step 7

Place a slice of Fontina cheese on two of the mustard-coated slices of bread.

Step 8

Evenly spoon the sautéed mushrooms over the slices with Fontina cheese. Top each with another slice of Fontina cheese.

Step 9

Close the sandwiches with the remaining slices of bread, mustard side facing inward.

Step 10

Heat a large skillet or griddle over medium heat. Add 1 tablespoon of butter and let it melt, swirling to coat the surface.

Step 11

Place the sandwiches in the skillet and cook for 3-4 minutes on one side, pressing down gently with a spatula to ensure even browning.

Step 12

Flip the sandwiches, add the remaining tablespoon of butter, and cook for another 3-4 minutes until the bread is golden brown and the cheese is fully melted.

Step 13

Remove the sandwiches from the skillet and let them cool for a minute before slicing in half.

Step 14

Serve warm and enjoy your Grilled Fontina Cheese Sandwich with Mushrooms and Dijon!
