Slice the eggplants lengthwise into 1/2-inch slices. Sprinkle with 1 teaspoon of salt and let them sit for 15 minutes on a paper towel to draw out excess moisture. Pat dry with another paper towel.
Brush both sides of the eggplant slices with 2 tablespoons of olive oil.
