Ingredients

  • 2 medium Eggplants
  • 3 tablespoons Olive oil
  • 1 teaspoon Salt
  • 0.5 teaspoons Black pepper
  • 0.5 cup Sweet chile sauce
  • 2 cloves Garlic
  • 2 tablespoons Fresh cilantro (optional, for garnish)
  • 1 tablespoon Sesame seeds (optional, for garnish)

Directions

Step 1

Wash the eggplants thoroughly and cut them into 1/2-inch thick rounds.

Step 2

Place the eggplant rounds on a clean surface and sprinkle both sides with the salt. Let them sit for 10 minutes to draw out excess moisture.

Step 3

Pat the eggplant rounds dry with a paper towel. Brush both sides with olive oil and sprinkle with black pepper.

Step 4

Preheat an outdoor grill or a grill pan over medium heat. Lightly oil the grates or the pan to prevent sticking.

Step 5

Grill the eggplant rounds for 3-4 minutes on each side until they develop grill marks and become tender. Remove from the heat and set aside.

Step 6

In a small bowl, mix the sweet chile sauce and minced garlic until well combined.

Step 7

Brush the warm eggplant rounds generously with the sweet chile sauce mixture on both sides. Return them to the grill for 1-2 minutes to caramelize the sauce slightly.

Step 8

Transfer the grilled eggplants to a serving plate. Sprinkle with fresh cilantro and sesame seeds if desired.

Step 9

Serve warm as an appetizer, side dish, or part of a main meal. Enjoy!
