  • 2 cups Marinara sauce
  • 2 cups Mozzarella cheese (shredded)
  • 1 cup Parmesan cheese (grated)
  • 10 leaves Fresh basil leaves
  • 0.5 teaspoon Black pepper

Directions

Step 1

Slice the eggplants into 1/2-inch thick rounds and generously sprinkle both sides with salt. Let them sit in a colander for 20 minutes to draw out moisture, then rinse under cold water and pat dry with paper towels.

Preheat a grill or grill pan over medium-high heat. Brush both sides of the eggplant slices with olive oil and season lightly with black pepper.
