Ingredients

  • 4 pounds Country-style pork ribs
  • 2 tablespoons Olive oil
  • 2 teaspoons Paprika
  • 2 teaspoons Garlic powder
  • 1 teaspoon Onion powder
  • 1 teaspoon Chili powder
  • 2 tablespoons Brown sugar
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 1 quarter cup Apple cider vinegar
  • 1 cup Barbecue sauce (optional for serving)

Directions

Step 1

Rinse the country-style pork ribs under cold water and pat them dry with a paper towel. Set aside.

Step 2

In a small bowl, whisk together paprika, garlic powder, onion powder, chili powder, brown sugar, salt, and black pepper.

Step 3

Rub the spice mixture generously over all sides of the pork ribs. Drizzle olive oil over the ribs and rub it in to help the spices adhere.

Step 4

Place the seasoned ribs in a large resealable plastic bag. Add apple cider vinegar to the bag, seal tightly, and massage the ribs to coat them in the vinegar and spice rub. Refrigerate for at least 2 hours, or up to overnight for the best flavor.

Step 5

Preheat your grill to medium-low heat (300–350°F). If using charcoal, bank the coals to one side to create an indirect cooking area.

Step 6

Remove the ribs from the fridge and let them sit at room temperature for 20 minutes while the grill preheats.

Step 7

Oil the grill grates lightly to prevent sticking. Place the ribs over indirect heat, cover the grill, and cook for 45–60 minutes, turning occasionally to ensure even cooking.

Step 8

For additional flavor, periodically baste the ribs with any leftover marinade or a light layer of barbecue sauce during the last 15 minutes of grilling.

Step 9

Use a meat thermometer to ensure the ribs reach an internal temperature of 145°F for safely cooked pork.

Step 10

Once fully cooked, remove the ribs from the grill and let them rest for 5–10 minutes to allow the juices to redistribute.

Step 11

Serve the grilled ribs with extra barbecue sauce on the side and your favorite accompaniments, such as coleslaw, baked beans, or cornbread.
