Ingredients

  • 6 ears fresh corn on the cob
  • 8 tablespoons unsalted butter
  • 2 teaspoons chili powder
  • 1 teaspoon smoked paprika
  • 0.5 teaspoon cayenne pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon lime zest
  • 2 tablespoons lime juice
  • 0.5 teaspoon kosher salt
  • 2 tablespoons fresh cilantro, chopped (optional)

Directions

Step 1

Preheat your grill to medium-high heat (about 400°F/200°C).

Step 2

Husk the corn, removing all the outer leaves and silk. Rinse each ear of corn under cold water to remove any remaining silk.

Step 3

In a small bowl, mix together the unsalted butter, chili powder, smoked paprika, cayenne pepper, garlic powder, lime zest, lime juice, and kosher salt until fully combined. Set the spicy chili butter aside.

Step 4

Place the corn directly on the preheated grill grates. Rotate the corn occasionally to cook evenly, about 2-3 minutes per side, until the kernels are tender and slightly charred (total grilling time should be about 10-12 minutes).

Step 5

Once the corn is cooked, remove it from the grill and place it onto a serving plate.

Step 6

While the corn is still hot, generously spread the spicy chili butter over each ear of grilled corn. The heat will help the butter melt into the kernels.

Step 7

Garnish with chopped fresh cilantro if desired and serve immediately while warm.
