Preheat your grill to medium-high heat (about 400°F).
Clean the ears of corn by removing the husks and silk strands. Brush them lightly with olive oil and set aside.
Roast the red bell pepper over a gas burner or under the broiler until the skin is charred and blistered on all sides. Place it in a bowl, cover with plastic wrap, and let it cool for 10 minutes.
Once the red pepper is cool, peel off the charred skin, remove the stem and seeds, and finely chop the flesh.
