Ingredients

  • 4 ears fresh corn on the cob
  • 1 medium sweet onion
  • 1.5 cups cherry tomatoes

  • 1 large lime

  • 0.25 teaspoon black pepper

Directions

Step 1

Preheat your grill or grill pan to medium-high heat.

Husk the corn and brush each ear lightly with 1 tablespoon of olive oil (reserve the other tablespoon for the dressing).

Peel the sweet onion and slice it into ½-inch thick rings. Brush the onion rings with a little olive oil as well.
