Ingredients

  • 3 ears fresh corn on the cob
  • 2 tablespoons olive oil
  • 1.5 cups cherry tomatoes
  • 2 large avocado
  • 0.25 cup fresh cilantro
  • 0.25 cup red onion
  • 2 tablespoons lime (juice)
  • 0.5 teaspoons sea salt
  • 0.25 teaspoons black pepper

Directions

Step 1

Preheat a grill or grill pan to medium-high heat.

Step 2

Brush the ears of corn with 1 tablespoon of olive oil, ensuring they are evenly coated.

Step 3

Place the corn on the grill and cook for 8-10 minutes, turning every 2-3 minutes, until the kernels are lightly charred. Remove from the grill and allow the corn to cool slightly.

Step 4

Using a sharp knife, carefully cut the kernels off the cob and transfer them to a large mixing bowl.

Step 5

Slice the cherry tomatoes in half and add them to the bowl with the corn.

Step 6

Dice the avocados into bite-sized chunks and add them to the bowl.

Step 7

Finely chop the fresh cilantro and thinly slice the red onion. Add both to the mixing bowl.

Step 8

In a small bowl, whisk together the remaining 1 tablespoon of olive oil, lime juice, sea salt, and black pepper to make the dressing.

Step 9

Drizzle the dressing over the salad ingredients and gently toss everything together until well combined.

Step 10

Taste and adjust seasoning if necessary. Serve immediately or refrigerate for up to 2 hours before serving.
