Ingredients

  • 1 lb Large shrimp, peeled and deveined
  • 1 cup Coconut milk
  • 2 tbsp Soy sauce
  • 2 tbsp Fresh lime juice
  • 2 cloves Garlic, minced
  • 1 tsp Fresh ginger, grated
  • 1 tbsp Honey
  • 1 cup Shredded unsweetened coconut
  • 1 cup Pineapple, small diced
  • 1 Red bell pepper, small diced
  • 0.5 Red onion, finely chopped
  • 2 tbsp Fresh cilantro, chopped
  • 1 Jalapeño, finely chopped
  • 1 tbsp Fresh lime juice (for salsa)
  • 1 tsp Salt
  • 1 tbsp Olive oil
  • 10 Skewers (if using wooden, soak in water for 30 minutes)

Directions

Step 1

In a large mixing bowl, whisk together the coconut milk, soy sauce, lime juice, minced garlic, grated ginger, and honey to create a marinade.

Step 2

Add the shrimp to the bowl and toss to coat evenly. Cover and refrigerate for 15 minutes to marinate.

Step 3

In the meantime, prepare the pineapple salsa by combining the diced pineapple, red bell pepper, red onion, chopped cilantro, jalapeño, lime juice, and a pinch of salt in a medium bowl. Mix well and set aside.

Step 4

Preheat your grill to medium-high heat and lightly oil the grates to prevent sticking.

Step 5

Remove the shrimp from the marinade and thread onto skewers. If desired, sprinkle shredded coconut on both sides of the shrimp for added texture and flavor.

Step 6

Place the shrimp skewers on the grill and cook for 3-4 minutes per side, or until the shrimp is pink and opaque.

Step 7

Remove the shrimp skewers from the grill and serve hot alongside the pineapple salsa as a refreshing topping or side dish.
