Ingredients

  • 1 lb raw large shrimp, peeled and deveined
  • 1 cup fresh cilantro, chopped
  • 3 tbsp lime juice
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 tsp ground cumin
  • 1 tsp paprika
  • 1 tsp salt
  • 2 Hass avocados, ripe
  • 1 jalapeño, seeded and diced
  • 2 tbsp lime juice
  • 2 tbsp sour cream
  • 0.5 tsp salt
  • 1 tsp olive oil

Directions

Step 1

In a large mixing bowl, combine chopped cilantro, 3 tablespoons of lime juice, 2 tablespoons of olive oil, minced garlic, ground cumin, paprika, and 1 teaspoon of salt. Stir well to create the marinade.

Step 2

Add the peeled and deveined shrimp to the bowl, tossing to coat evenly. Cover and let marinate in the refrigerator for 15 minutes.

Step 3

While the shrimp marinates, prepare the avocado puree. Scoop out the flesh of the ripe Hass avocados into a blender or food processor.

Step 4

Add the diced jalapeño, 2 tablespoons of lime juice, sour cream, 1/2 teaspoon of salt, and 1 teaspoon of olive oil to the blender. Blend until smooth and creamy. Taste and adjust seasoning if needed.

Step 5

Preheat a grill or grill pan to medium-high heat. Lightly oil the grates to prevent sticking.

Step 6

Thread the marinated shrimp onto skewers. Grill the shrimp for 2-3 minutes per side or until they are pink, opaque, and slightly charred.

Step 7

Remove the shrimp from the grill and serve immediately alongside the spicy Hass avocado puree.

Step 8

Garnish with additional chopped cilantro or lime wedges if desired. Enjoy!
