Ingredients

  • 500 grams Boneless chicken thighs
  • 500 grams Boneless pork loin
  • 3 pieces Chipotle peppers in adobo sauce
  • 3 pieces Garlic cloves, minced
  • 2 tablespoons Honey
  • 4 tablespoons Soy sauce
  • 2 tablespoons Lime juice
  • 3 tablespoons Olive oil
  • 1 teaspoon Ground cumin
  • 1 teaspoon Smoked paprika
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoons Fresh cilantro, chopped
  • 20 pieces Wooden skewers

Directions

Step 1

Soak the wooden skewers in water for at least 30 minutes to prevent them from burning during grilling.

Step 2

Cut the chicken thighs and pork loin into bite-sized cubes, approximately 1 to 1 1/2 inches in size.

Step 3

In a blender or food processor, combine the chipotle peppers, minced garlic, honey, soy sauce, lime juice, olive oil, ground cumin, smoked paprika, salt, and black pepper. Blend until smooth to form the marinade.

Step 4

Reserve 1/4 cup of the marinade for basting while grilling. Pour the remaining marinade over the cubed chicken and pork in a large bowl or resealable bag. Mix well to ensure all pieces are coated. Cover and refrigerate for at least 2 hours, or overnight for enhanced flavor.

Step 5

Preheat the grill to medium-high heat and lightly oil the grates.

Step 6

Thread the marinated chicken and pork onto the soaked skewers, alternating between the two proteins for variety.

Step 7

Place the skewers on the preheated grill and cook for 10-15 minutes, turning occasionally and basting with the reserved marinade. Ensure the meat is cooked through with no pink in the center (internal temperature of at least 165°F/74°C for chicken and 145°F/63°C for pork).

Step 8

Remove the skewers from the grill and garnish with freshly chopped cilantro before serving.

Step 9

Serve hot with your favorite dipping sauce or side dishes such as rice, salad, or grilled vegetables.
