  • 4 pieces Flour tortillas
  • 2 cups Shredded Mexican blend cheese
  • 1 piece Red bell pepper, diced
  • 3 stalks Green onions, chopped
  • 2 tablespoons Fresh cilantro, chopped (optional)
  • 0.5 cup Sour cream (for serving)
  • 0.5 cup Salsa (for serving)

Directions

Step 1

In a medium bowl, mix together the chipotle peppers, lime juice, garlic powder, ground cumin, salt, and black pepper to create a marinade.

Step 2

Place the chicken breasts in the bowl and coat them thoroughly with the marinade. Let them marinate for at least 15 minutes; for best results, refrigerate for 1-2 hours.

Heat a grill or grill pan over medium-high heat. Brush with olive oil to prevent sticking.
