Ingredients

  • 4 pieces boneless skinless chicken breasts
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 cup cherry tomatoes
  • 0.5 cup fresh raspberries
  • 0.25 cup red onion, finely diced
  • 2 tablespoons fresh cilantro, chopped
  • 1 whole lime, juiced
  • 1 teaspoon honey

Directions

Step 1

Preheat your grill to medium-high heat.

Step 2

Pat the chicken breasts dry with a paper towel. Drizzle with olive oil and rub evenly to coat.

Step 3

In a small bowl, mix garlic powder, paprika, salt, and black pepper. Sprinkle the seasoning mixture evenly over both sides of the chicken breasts.

Step 4

Place the chicken on the grill and cook for 8-10 minutes per side, or until the internal temperature reaches 165°F (74°C). Remove from heat and let rest for 5 minutes.

Step 5

Meanwhile, prepare the tomato raspberry salsa. Halve the cherry tomatoes and place them in a medium bowl.

Step 6

Add the fresh raspberries, red onion, chopped cilantro, lime juice, and honey to the bowl with the tomatoes. Gently toss to combine, making sure to keep the raspberries intact. Taste and adjust seasoning, adding a pinch of salt if needed.

Step 7

To serve, place a grilled chicken breast on each plate and top with a generous spoonful of tomato raspberry salsa.

Step 8

Garnish with additional cilantro if desired, and serve immediately.
