Ingredients

  • 2 pieces Chicken breasts (boneless, skinless)
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 0.5 teaspoon Garlic powder
  • 0.5 teaspoon Paprika
  • 1 tablespoon Olive oil
  • 0.5 cup Apricot preserves
  • 2 tablespoons Red onion (finely diced)
  • 1 teaspoon Fresh ginger (grated)
  • 1 tablespoon White vinegar
  • 0.25 teaspoon Ground cinnamon
  • 0.25 teaspoon Ground coriander
  • 12 pieces Hawaiian rolls
  • 6 pieces Lettuce leaves
  • 6 slices Cheddar cheese slices (optional)

Directions

Step 1

Preheat your grill to medium-high heat.

Step 2

Slice each chicken breast in half horizontally to create thinner fillets. Season both sides of the chicken with salt, black pepper, garlic powder, and paprika.

Step 3

Drizzle olive oil over the chicken fillets and set aside to marinate for 10 minutes.

Step 4

In a small saucepan over medium heat, combine apricot preserves, red onion, grated ginger, white vinegar, ground cinnamon, and ground coriander. Stir well and heat for 5-7 minutes until the mixture thickens slightly. Remove from heat and let cool.

Step 5

Grill the chicken fillets for 4-5 minutes on each side, or until the internal temperature reaches 165°F (74°C). Remove from the grill and let rest for 5 minutes.

Step 6

Slice the grilled chicken fillets to fit the size of your slider buns.

Step 7

Toast the Hawaiian rolls lightly on the grill for 1-2 minutes until golden and warm.

Step 8

Assemble the sliders by spreading a generous layer of the apricot chutney on the bottom half of each roll. Place a piece of grilled chicken on top, followed by a lettuce leaf and (if using) a cheddar cheese slice. Top with the other half of the roll.

Step 9

Serve immediately and enjoy your Grilled Chicken Sliders with Apricot Chutney Spread!
