  • 1 cup Cucumber (diced)
  • 0.5 cup Red onion (thinly sliced)
  • 0.25 cup Fresh parsley (chopped)
  • 0.5 cup Feta cheese (crumbled)
  • 3 tablespoons Lemon juice
  • 2 tablespoons Red wine vinegar
  • 1 teaspoon Honey
  • 1 teaspoon Dijon mustard

Directions

Step 1

Heat a grill or grill pan over medium-high heat. Rub the chicken breasts with 1 tablespoon olive oil, garlic powder, 1 teaspoon salt, 0.5 teaspoon black pepper, and oregano.

Grill the chicken for 6-7 minutes per side or until the internal temperature reaches 165°F (74°C). Set aside to rest for 5 minutes, then slice into thin strips.
