Ingredients

  • 0.25 cup Fresh parsley, chopped
  • 1 unit Red onion, chopped into large pieces
  • 2 units Bell peppers (any color), chopped into large pieces
  • 12 units Wooden skewers, soaked in water

Directions

Step 1

Cut the boneless chicken thighs into 1-inch cubes and set aside.

In a large mixing bowl, combine the plain yogurt, olive oil, lemon juice, minced garlic, ground cumin, ground coriander, ground paprika, salt, black pepper, and chopped parsley.
