Ingredients

  • 2 medium-sized chicken breasts
  • 200 grams shiitake mushrooms

  • 4 cups mixed salad greens
  • 200 grams cherry tomatoes
  • 0.5 medium-sized red onion
  • 2 cloves garlic
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons parsley
  • 1 tablespoon lemon juice

Directions

Step 1

Preheat the grill or grill pan to medium-high heat.

Step 2

Season the chicken breasts on both sides with salt, black pepper, and 1 tablespoon of olive oil.

In a small bowl, whisk together 3 tablespoons of olive oil, balsamic vinegar, honey, Dijon mustard, minced garlic, and lemon juice to make the dressing.
