Ingredients

  • 4 slices Bread (sourdough or rustic white)
  • 4 slices Cheese (sharp cheddar or Gruyere)
  • 4 slices Bacon
  • 0.5 whole Apple (e.g., Granny Smith or Honeycrisp)
  • 2 tablespoons Dijon mustard
  • 2 tablespoons Butter (softened)

Directions

Step 1

Cook the bacon in a skillet over medium heat until crispy, about 5-7 minutes. Transfer the bacon to a paper towel-lined plate to drain excess grease.

Step 2

While the bacon cools, thinly slice the apple into even rounds or half-moons, depending on your preference. Discard the core and seeds.

Step 3

Lay out the bread slices and spread 1/2 tablespoon of Dijon mustard on one side of each slice.

Step 4

Place 1 slice of cheese on top of the mustard-coated side of 2 of the bread slices. Add 2 slices of cooked bacon and a layer of apple slices, then top with another slice of cheese. Finish by placing the remaining bread slices mustard-side down on top to form the sandwiches.

Step 5

Spread a thin, even layer of softened butter on the outside of each sandwich (both top and bottom slices of bread).

Step 6

Heat a large skillet or griddle over medium heat. Add the sandwiches and cook for 3-4 minutes on one side until golden brown and crispy. Carefully flip the sandwiches and cook for another 3-4 minutes on the other side until the cheese is melted and the bread is evenly toasted.

Step 7

Remove the grilled cheese sandwiches from the skillet and let them rest for 1-2 minutes. Slice in half and serve warm.
